how to tell if I am using XeLaTeX, LuaLaTeX or pdfTex? What exactly are?

I have installed LaTeX on Ubuntu 18.04 using
sudo apt-get install texlive-full
How can I tell if I am using XeLaTex, LuaLaTeX or pdfLaTeX?
What are they exactly?
I edit my tex files with the latest version of Gummi.
